While Luke was very excited, to the point where his energy was bubbling out through the Force enough to be felt for miles, the moment the lesson is clearly starting the energy becomes laser focused and intense. He immediately settles into his ready stance, whipping out his lightsaber with none of the flourish and flash of the Jedi of old. One moment he was standing there, the next he was ready to throw down like Maul was out for his blood.
If nothing else, it really drove home the fact that he grew up in the middle of war.
His feet were firmly planted at least, and it was clear he had picked up some variation of his father's form, even if he didn't know the names of the different forms. There was definitely a feel of being self taught, despite how sure he was in his stance.
